(with Spaghetti Squash)
Taco Bake - Serves 4–5

Ingredients:
1.5 lb ground turkey (or grass-fed beef)
1 tbsp olive oil
3 cloves garlic, minced
1 small yellow onion, diced
1 red bell pepper, diced
2 cups cooked spaghetti squash strands
1 tbsp chili powder
1 tsp cumin
1 tsp paprika
½ tsp oregano
½ tsp sea salt
¼ tsp black pepper
2 tbsp tomato paste
¼ cup water
¾ cup shredded raw cheddar, organic cheese or goat cheese (optional)
Instructions:
Step 1: Cook the Spaghetti Squash
Preheat oven to 400°F.
Slice spaghetti squash in half and remove seeds.
Drizzle lightly with olive oil and sprinkle with salt.
Place cut side down on a baking sheet.
Roast 35–40 minutes until tender.
Use a fork to scrape into spaghetti-like strands.
Measure about 2 cups for the recipe.
