Becky's Taco Bake

(with Spaghetti Squash)

Taco Bake - Serves 4–5


A spoon full of taco bake casserole

Ingredients:

  • 1.5 lb ground turkey (or grass-fed beef)

  • 1 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 small yellow onion, diced

  • 1 red bell pepper, diced

  • 2 cups cooked spaghetti squash strands

  • 1 tbsp chili powder

  • 1 tsp cumin

  • 1 tsp paprika

  • ½ tsp oregano

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • 2 tbsp tomato paste

  • ¼ cup water

  • ¾ cup shredded raw cheddar, organic cheese or goat cheese (optional)


Instructions:

  1. Step 1: Cook the Spaghetti Squash

  2. Preheat oven to 400°F.

  3. Slice spaghetti squash in half and remove seeds.

  4. Drizzle lightly with olive oil and sprinkle with salt.

  5. Place cut side down on a baking sheet.

  6. Roast 35–40 minutes until tender.

  7. Use a fork to scrape into spaghetti-like strands.

  8. Measure about 2 cups for the recipe.
